Have you been searching for the perfect Chili Recipe for your family? Don't have the ability to watch over it as it cooks? Use your crockpot for this scrumptious recipe. This recipe is not intended to be hot and spicy. If you like it hot, by all means, add more chili powder, chili pepper flakes or some hot sauce. You can also substitute the mild salsa for medium or hot as well. This recipe is great all year round but especially on a chilly winter day.

Ingredients:

1-1.5 lbs of 90% Lean ground beef

15 oz. can diced tomatoes

½ cup-3/4 cup Pace Mild Salsa or your own brand

15 oz. can kidney beans rinsed and drained

1 onion diced

1 green pepper diced

1 celery stalk diced

1 tbsp chili powder

1 tsp cinnamon

2 cups of water

¼ tsp of salt (if other spices have it, don't use it)

1 tsp of garlic powder

1 tsp black pepper

1 tbsp of minced garlic from jar or one clove minced

¼ tsp oregano

¼ tsp thyme

¼ tsp basil

2 tbsp of fresh minced parsley/cilantro (put in 30 minutes before completely cooked)

Topping:

¼ cup Grated cheddar cheese (2 tbsp for each bowl)

4 tbsp Plain yogurt or sour cream (2 tbsp for each bowl)

2 tbsp cilantro (for topping each bowl)

* If you like black olives, you could use 2 cut up olives for each

Recipe Serves 4

Instructions:

Brown the lean ground beef and drain the fat. Add a dash of garlic powder as you cook it. Then add in the green pepper and onion after meat is done to sauté. When lightly brown add to the crockpot with all other ingredients. Cook on low for 8hrs or cook on high for 4hrs.

Serve into large bowls and sprinkle some cheddar cheese (2 tbsp)for each one then add the plain yogurt. Top with cilantro and a dash of ground black pepper.

***Double the recipe and it fits into a 5 quart Crockpot***

Boneless roasts are sometimes called ribeye roasts or "eye of the rib". A boneless roast serves more people per pound -- you can count on getting two servings per pound rather than about 1 1/2 servings per pound for a standing rib roast. An eight or ten pound roast is perfect for this boneless prime roast recipe.

You can marinate the roast before you cook it for extra flavor, although many think that the beef is tasty enough as is. Marinating can also make the meat more tender. If you decide to marinate the meat, let it soak for an hour or two before making this boneless prime roast recipe.

Before you cook the meat, make sure that it has reached room temperature. This means you should take it out of the refrigerator about two hours before it is put in the oven. A good prime rib roast recipe will tell you to rub of exterior of the meat with horseradish or Worcestershire powder.

Preheat the oven to 500° and place a layer of rock salt in the bottom of the roasting pan. The layer of salt should be about 1 inch deep. Sprinkle the salt with about half a cup of warm water and place the roast on top of the salt. The boneless prime rib recipe tells you to cover the roast completely with rock salt.

The reason this boneless prime rib recipe uses rock salt is to seal the exterior of the meat so that it remains tasty and juicy. The beef will not taste salty -- the salt crust is removed before serving.

Hearty beef pot pie is a great meal to serve on a cold day or any time you want something that really sticks to your ribs. You can add extra zing to this recipe by adding 1 large chopped onion and mix in 1/3 cup of red wine with the gravy.

1 pound sirloin steak, cubed

Salt and pepper to taste

1 (14 oz.) can beef broth

3 large carrots, cubed

1 cup frozen green peas, thawed

3 tablespoons cornstarch

1/3 cup water

2 (9-inch) refrigerator pie crusts

Directions

Preheat oven to 350 degrees.

In a saucepan over medium high heat, brown the pieces of meat on all sides. Pour in enough water to almost cover the meat. Bring to a boil and reduce heat. Simmer meat until it falls apart easily (about 2 to 3 hours). Place meat in a large bowl. Slightly shred the meat and season with salt and pepper to taste.

In a 2-quart saucepan, combine the beef broth, carrots and potatoes. Cook over medium high heat until almost tender (about 15 to 20 minutes).

When the carrots and potatoes are done, transfer to a large mixing bowl and combine with the beef. Reserve the liquid in the saucepan. Mix the peas in with the vegetables and beef.

Dissolve the cornstarch in 1/3 cup of water and pour this into the reserved beef broth. Bring to a simmer while stirring constantly; reduce heat. Cook for 5 minutes.

Line a 9-inch pie plate with one of the pie shells following package directions. Spoon the beef mixture into the pie crust. Pour the gravy on top. Cover with remaining pie crust.

Bake for 25 minutes, or until crust is golden brown. Let cool for 5 minutes before serving.

This recipe is an American favorite. We love hamburgers, so making a pie out of our favorite meat sandwich is a winning idea. To give this recipe a richer flavor, you can substitute 1 can of mushroom soup for 1 can of tomato soup.

4 potatoes

1 pound lean ground beef

1 onion, chopped

2 (10.75 oz.) cans condensed tomato soup

1 (15 oz.) can green beans, drained

1 cup cheddar cheese, shredded

Directions

Preheat oven to 350 degrees.

Bring a large pot of salted water to a boil. Peel and quarter the potatoes and put into boiling water; cook for 15 minutes, or until tender. Drain and mash. Set aside.

In a large skillet, cook ground beef and onion over medium high heat until the beef is brown; drain. Stir in the tomato soup and green beans.

Pour mixture into a 9x13-inch baking dish. Mound the mashed potatoes around the meat mixture (do not cover meat). Sprinkle cheese on top of the potatoes.

Bake for 30 minutes, or until potatoes are golden.

1 pound ground beef

1 onion, chopped

2 cloves garlic, minced

1 tomato, sliced

1/2 teaspoon garlic salt

1 teaspoon ground black pepper

1 teaspoon dried oregano

1 cup shredded cheddar cheese

1/2 cup buttermilk baking mix

1 cup milk

2 eggs

Directions

Preheat oven to 400 degrees. Grease a 10-inch deep dish pie plate.

In a large skillet, cook beef, onion and garlic over medium heat until beef is brown; drain. Spread beef mixture into the pie plate.

Sprinkle beef with salt, pepper and oregano. Arrange tomato slices on top of meat. Sprinkle cheese on top.

In a small bowl, combine together the baking mix, milk and eggs. Pour over cheese.

Bake for 25 minutes, or until knife inserted in center comes out clean. Cool for 5 minutes before serving.

This is a nice variation on the basic hamburger pie recipe. The cornbread mix adds a nice sweetness and blends very well with the other ingredients. For an extra treat, add 1 can of creamed corn to the cornbread mix.

1 pound ground beef

1 medium onion, chopped

1 medium green pepper, chopped

1 (10.75 oz.) can condensed tomato soup, undiluted

1/4 cup salsa

2 tablespoons ketchup

1 tablespoon steak sauce

1 (8.5 oz.) package corn bread/muffin mix

Minced fresh parsley (optional)

Directions

Preheat oven to 400 degrees.

In a large oven proof skillet, cook the beef, onion and green pepper over medium high heat until meat is brown; drain. Stir in the soup, salsa, ketchup and steak sauce.

Prepare the cornbread batter according to package directions; let stand for 2 minutes. Spoon batter over beef mixture. Bake for 15 minutes or until corn bread is lightly browned. Garnish with parsley.

For those of you that do not know what chitterlings or hog maws are I'm here to let you in on what they are. Chitterlings are the pig's intestine and hog maws are part of the cow's stomach. Now, the smell is not very pleasant, but the taste is very well worth it. It takes time and patience to prepare this dish. Time preparation is about five hours. If I'm serving this dish I clean the chitterlings and hog maws a day before to same time.

What you will need for this delicious dish:

2 bags of 10lb pre cleaned or a 10lb bucket of chitterlings, depending on how many people you are serving. This is for about 7 people. If you are serving more get an extra 20lbs. If you just want to try them out then just get a one pound bag just to taste.

Two packages of hog maws
1 large onion
2 TBSP of Season salt
TBSP of crushed red pepper
2 TBSP of garlic powder

To start you will have to defrost the chitterlings. The hog maws are usually thawed already. Soak the pig intestines into warm water. Once unthawed remove the feces and hair from the intestines. The intestines should be clear, if you have to pull the inside skin off to get the feces off then do it. As long as it is clean. Cut the intestines in half, unless you prefer them long. This should take about two and a half hours to do. For me it does, because I have to make sure my chitterlings are thoroughly clean. Throw in the hog maws. You can clean these at the same time. If you get go to the right store meat market. Most hog maws are clean, but if not remove the brown feces from the inner part. Hog maws are big and tough, use a sharp knife, cut them into about the size of hand held chicken nuggets.

Once you have cleaned them, Rinse thoroughly with warm water about 4 times. Get a stew pot fill half way with water and cut the eye on high so that the water can begin to boil. There's no need to fill the pot to the top, because the chitterlings holds water. Put the chitterlings and hog maws in the pot and season with the garlic, season salt and red peppers. Cut onion in coarse pieces and throw it in the pot to mix. Once it starts to boil, put the eye on medium and let cook for three hours until tender. Once done, serve on a plate and top it with hot sauce or just it by itself.

Do you want that special something for the next family reunion? Try a family cookbook, involve the entire family and collect the recipes they each like the best. This is a great way to get your aunts recipe for apple pie. If the family reunion is to be a pot luck, have them bring a recipe card for the dish they will be providing. This method has several advantages. A picture of the person can be added to the recipe when the book is compiled. But how do you turn those family culinary favorites into an actual family cookbook.

Making a family cookbook can be a very unique way not only to share recipes that have been in your family for years but to share special memories as well. Compiling a cookbook is a fun and very rewarding task. A family cookbook is more than just collecting recipes everyone loves. Computers are great for this project and using a regular notebook allows people to add to the recipe book at a later date. You can even email the book to those who have a computer and are online to help save on postage.

In addition this can be used as a great memory for the family reunion and a way to get pictures to all of the family members who forgot to bring their cameras. Just add photos to the book and it will bring funny and happy memories for years to come. If there is a problem of the cost of materials, have each member who wants one donate a small fee to cover the costs of the paper, ink, notebooks and postage. I do not know how many times I have gone to a pot luck and spent lots of time asking for the recipes.

I have never been to where I did not find several dishes i really liked and wanted to make for my family later. If you would rather have the recipe book on hand at the reunion, just request in advance. Moreover, most families have many such recipes handed down through generations, taught to children or squirreled away on index cards or scraps of paper. Set a deadline that allows family members at least a few weeks to gather together their recipes but not so far out in the future that they forget about the project all together. Many people use recipes out of books and off packages for their own cookbooks.

Another example would be someone or a group who has some unique recipes and just wants to put them together in a cookbook. Everyone in the family can contribute recipes for inclusion. In many instances, a basic recipe is given and then numerous variations are suggested. Most of the recipes are relatively easy to make and not only tell you how to take the dish up a notch with embellishments but what to do if your vegetarian is also a picky eater.

A family cookbook is one way to preserve the past in a personalized collection of recipes. In the past, most people relied on word of mouth to keep the family recipes and memories alive but with time these details can fade. Whatever means you use, this is a great moment of a special day for your family, enjoy it and remember to send one to the family members who could not be there for whatever reason. Indeed, family cookbooks are a gift of the past and also for the future.

How to make Chicken Cordon Bleu in the Crockpot

Crockpot stuffed chicken recipe with Swiss cheese and ham.

INGREDIENTS:

4-6 chicken breasts (pounded out thin)

4-6 pieces of ham

4-6 slices of Swiss or mozzarella cheese

1 can cream of mushroom soup (can use any cream soup)

1/4 cup milk

PREPARATION:

Put ham and cheese on chicken. Roll up and secure with a toothpick. Place chicken in the slow cooker/Crock Pot so it looks like a triangle /_\ Layer the rest on top. Mix soup with the milk; pour over top of chicken.

Cover and cook on low for 4 hours or until chicken is no longer pink. Serve over noodles with the sauce it makes.

BBQ Chicken

INGREDIENTS:

6 to 8 frozen chicken legs*

1 bottle thick barbecue sauce

PREPARATION:

Put frozen chicken legs in slow cooker. Pour BBQ sauce over them. Cover and cook on HIGH for 6 to 8 hours.

*Note: If starting with thawed chicken legs, you may remove skin or brown first to reduce fat, and cook on LOW for 6 to 8 hours.

Coffee cake with apple pie filling, cooked in the slow cooker
INGREDIENTS:

Apple Mixture:

1 can (20 oz) apple pie filling, apple slices broken up somewhat

1/2 teaspoon cinnamon

3 tablespoons brown sugar

Cake Batter:

2 small yellow cake mixes (Jiffy - 9-ounce each)

2 eggs, beaten

1/2 cup sour cream (light)

3 tablespoons softened butter or margarine

1/2 cup evaporated milk

1/2 teaspoon cinnamon

1 teaspoon butter or margarine for greasing slow cooker

PREPARATION:

Combine ingredients for apple mixture in a small bowl. Combine batter ingredients; mix well. Generouslly butter the sides and bottom of a 3 1/2 quart slow cooker/Crock Pot. Spread about half the apple mixture in the bottom of the pot.

Spoon 1/2 the batter over the apple mixture. Spoon the remaining apple mixture over the batter, then cover with remaining batter. Cover and cook on high for 2 to 2 1/2 hours. Turn heat off, leave cover ajar slightly, and cool for about 15 minutes. Invert on a plate, retrieving any apples left in the bottom of the pot and placing on top of the cake. Makes a cake about 7 inches in diameter and 3 1/2-inches high.

I made hot dogs the same way pretty much for years. They were always okay, but nothing to brag about. I think maybe in the back of my mind, the lowly wiener was just not important enough to warrant creative input from my imaginative culinary side. Then one day, I decided to try something different.

As a youngster, I was taught to boil the wiener in water, put it in a bun, and squirt various condiments on top. But as I grew and advanced in culinary skills, I knew there had to be a way to improve on this method of cooking a hot dog.

Things that go great with hot dogs are: potato chips, baked beans, coleslaw, or potato salad.

This method of cooking the lowly wiener is now a regular thing around my house. My family loves them, and they really are good. Here's what you'll need:

* All beef wieners (you can eat that other "stuff" if you want, we only eat beef wieners; we also prefer bun length)
* Soft buns (you want fresh buns here, not stale, although you can steam stale buns back to life if you insist on using old bread - I have other uses for old bread such as Bread Pudding with Amaretto Sauce)
* Hot dog relish
* Sauerkraut
* Diced onions
* Mustard and ketchup
* Kraft shredded mexican style four cheese blend
* Hot dog chili sauce (Castleberry's is our favorite)
* Laura's homemade cole slaw
* Butter
* Tin foil
* Crock-pot
* Cast iron skillet

Now, you do not have to do everything the same way I do it. I am letting everyone know how I do it, and you can adjust as you see fit.

Please note the hot dogs need to spend some time in the crock-pot in order to be good, and the steaming method I mention below is great. Plan properly so the dog packets get to warm and meld inside their "packet" in the hot crock-pot. I normally make the dogs and allow them 45 minutes to an hour in the crock.

About an hour before dinner, turn the crock-pot on low and let it get warm. Heat up the iron skillet, and add a tablespoon of butter. Fry the beef wieners in the iron skillet. When they have a good "fry" on the outside, sort of like you get if you grill them, remove and place inside of a fresh non-stale soft bun (I am very particular about my bread being soft and fresh) Immediately wrap the assembled bun and wiener in tin foil, sealing all edges. Place in crock-pot. Repeat with remaining buns and wieners. Cover the crock-pot and leave it alone. Heat up the chili in the microwave or on the stove. Prepare the other condiments. Get everything on the table, including drinks, chips, dip, whatever. Then get out one assembled dog at a time for each diner, keeping the rest in the crock-pot with lid on to remain warm.

These warm up really great. Simply take the bun and wiener combination out of aluminum foil (do not forget this step in order to avoid a nasty microwave incident), wrap loosely in a paper towel, and microwave about 10-15 seconds. Do not overdo it, the bun will get hard.

Alternate method: I tried this once and it was even better. Place a rack in the bottom of the crock-pot before adding hot dogs. Add one tablespoon or so of water. Be careful, you do not want to have the dog packets sitting in liquid. The idea is to lightly "steam" them instead.

I usually eat two hot dogs, each made as follows:

Version #1: (ingredients are in the order used) mustard, ketchup, relish, chili sauce, cheese, onions

Version #2: (ingredients are in the order used) mustard, relish, onions, sauerkraut, homemade coleslaw

Now, a note here about slaw. There are all kinds of different ways to make coleslaw. There is also slaw mix that can be bought in a bag. I am as particular about my slaw as I am about my bread. My momma made coleslaw pretty much the same way for years, and it always tasted good.

If you've ever eaten bad coleslaw, you'll remember it. Some fast food restaurants have the audacity to CALL it coleslaw, but it is more like tasteless cardboard "stuff." Did it ever seem to you that the slaw in many restaurants is often stark white, as if it is all made entirely from the cabbage core? Makes you wonder what happened to all of the GREEN stuff.

I am very picky about certain things: fresh bread is one; fresh milk is another; good tasting coleslaw is important; I think the hot dog chili sauce by Castleberry's is great; I use the Kraft Mexican style four cheese blend almost daily; I want to know what is in the meat I eat. Looking For Simple No Bake Chocolate Macaroon Recipe

This recipe was a favorite of my sister and I. We loved it when my mom would make these. When we were old enough to cook, the house always smelled like chocolate macaroons. I think we made this recipe about a couple of times a week. They are very easy to make and super yummy to eat! Another thing I like about this recipe is that you don't use a lot of dishes, so clean-up is a breeze as well. These cookies are great if you are in a pinch and need to make something delicious in a hurry. Another great thing is the ingredient list is very short and most things I'm sure you will be able to find in your very own kitchen.

I hope you enjoy making these macaroons as much as I know you will enjoy eating them.

What you need to make the macaroons:

2 cups granulated sugar

1/2 cup butter

1/2 cup milk

6 tbsp cocoa

1/2 cup fine shredded coconut

3 cups oatmeal

1-2 cookie sheets waxed paper

1. Combine the first four ingredients together in a large pot and bring to a boil for about 2-3 minutes, stirring constantly.

2. Take pot off of stove and add the coconut and oatmeal. Mix until everything is coated.

3. Place on a wax paper lined cookie sheet by heaping tablespoon-fulls. To have these cookies ready quickly, cool in refrigerator, or leave and let cool to room temp.

Enjoy!

Note: You may need to double batch these cookies as they will disappear fast!!!!
